Tuna Mushroom Pasta

>> Sunday 26 April 2009

If you love tuna, you will surely love this pasta dish. I love tuna because it is very healthy, a rich source of omega3 and other nutrients. I usually use canned tuna since it is readily available. I doubt if they sell fresh tuna here, haven’t seen one yet, or maybe they do but fresh “frozen” tuna.. Nothing beats what I call “fresh tuna” straight from the matadero in Bankerohan. Tuna can be also combined with other ingredients without overpowering or being overpowered thus the whole dish comes out light and delicate.

Tuna Mushroom Pasta

2 cups Pasta of your choice
1 tbsp unsalted butter
1 small can Tuna chunks in oil - if you can find tuna in olive oil, that would be perfect!
2 tbp Light Mayonnaise
2 tbsp mushroom sauce
half a tsp parsley
1 tbsp olive oil
1 clove grated garlic- use microplane grater
1 tbsp minced chives ( sibuyas dahon gud!)
2 pcs cheese singles or cheddar
dash of salt and freshly ground pepper to taste
*Add-ons: mixed veggies (green peas, corn, carrots)

Directions
Bring about half a liter of salted water to a boil. Add the pasta and cook al dente
Meanwhile, combine tuna, mayo, mushroom sauce, chives, parsley, olive oil, garlic, and cheese. Give it a taste. If it’s salty enough then just add a dash of pepper.
While the pasta is still hot, add butter to melt. Pour in the tuna-mushroom sauce mixture and toss well. Done! :)
